Arthur Paillard is Export Manager at Don Bocarte, a Spanish seafood cannery.

The company is a family-run business based in Santoña on the Spanish Bay of Biscay. At the last edition of Gourmet Selection, he explained to us what motivated him to be an exhibitor at the show.

Don Bocarte is located in Santoña, the birthplace of the anchovy, bathed by the Cantabrian Sea. In Spain, this place is considered to be one of the sources of the best seafood. Bocarte means anchovy in Spanish...

DON BOCARTE AT GOURMET SELECTION TRADITION AND INNOVATION

Since 1997, Conservas Selección Santoñesa has been choosing only the best raw materials to make its products. This traditional cannery has become a leader in the production of high-quality canned and semi-canned seafood. One of its main priorities is to select innovative products.

One of Don Bocarte's flagship products is octopus caught in Galicia's Rías Gallegas (Bay of Biscay) using traps, one of the oldest and most traditional sustainable fishing methods. Any parts that do not reach the minimum size are thrown back into the sea.

After an appropriate cooking process, a perfect texture is obtained, while retaining all the flavour of the raw materials. Octopus-based products were also on display at Gourmet Selection 2024, along with an innovation from Don Bocarte: traditional Spanish dishes ‘in miniature’, in bite-size or croquette form.

Like creamy cod croquettes with a Biscayan sauce, or cuttlefish croquettes made with milk from the Cantabrian pastures and butter from the Pasiegos valleys.

Arthur Paillard, who owns a company that distributes selected artisanal gourmet products in France and Europe to fine food shops, restaurants and wine cellars, is representing Don Bocarte on the French market.
