Inevitably associated with Lyon, the gastronomic capital whose crown jewel is the quenelle, Giraudet is actually from Bourg-en-Bresse.
Driven by its history and the desire to meet consumer expectations and habits, Giraudet is an emblematic house from Bresse, specializing in quenelles, ravioli, sauces, and fresh soups. Giraudet products are still made in the Bourg-en-Bresse workshops, where human hands are involved at every stage of their creation.
As a result, in 2012, Giraudet was awarded the "Living Heritage Company" label, a state label that recognizes the craftsmanship of the house, which has been passed down for generations since its establishment in 1910.
A spoon-molded quenelle
A flagship of Bresse gastronomy and the signature product of the house, the Giraudet quenelle owes its reputation to the exceptional quality of its raw materials (durum wheat semolina, Bresse AOC butter, Bresse poultry, Dombes pike, etc.) and its artisanal production. It reflects a tradition of excellence, respecting quality, taste, terroirs, and people.
Giraudet has two shops in Lyon, one at Les Halles and the other near Place Bellecour in the heart of the city. The company also has shops in Annecy, Bourg-en-Bresse, and Paris, and is available through its website.
You can buy eight different quenelles online: natural with Bresse AOP cream; pike, crayfish, and morel mushroom; chicken with lemon, chives, and pine nuts; wild pike 30%; pike and wild crayfish; free-range chicken with morels; free-range chicken; and organic natural.
The quenelles are accompanied by the traditional Nantua sauce with crayfish, as well as morel, supreme, financière, and mushroom sauces. In total, Giraudet offers a dozen sauces. They also offer ravioli – another specialty – and soups. Quenelle deliveries can be made throughout France, including to retailers such as individual grocers.
