Since 1997, Conservas Selección Santoñesa has been selecting only the best raw materials to make its products. This traditional cannery has become one of the leaders in the production of high-quality canned and semi-canned seafood. It relies in particular on the selection of innovative products.
One of Don Bocarte's flagship products is octopus caught in the Rías Gallegas (Bay of Biscay) of Galicia using traps, one of the oldest and most traditional sustainable fishing methods. Pieces that do not reach the minimum size are thrown back into the sea. After a suitable cooking process, a perfect texture is obtained, while retaining all the flavor of the raw materials. Octopus products were also presented at Gourmet Selection 2024, as well as an innovation from Don Bocarte: “miniature” traditional Spanish dishes in the form of bites or croquettes. Like creamy cod croquettes with a biscayenne sauce or cuttlefish croquettes prepared with milk from the Cantabrian pastures and butter from the Pasiegos valleys.
Arthur Paillard, who has a distribution company for delicatessens, restaurants and cellars of selected artisanal gourmet products in France and Europe, thus represents Don Bocarte on the French market.
